Red Tail Farms offers beef for sale in the spring and fall of the year to both new and existing customers. Customers of Red Tail Farm can purchase a bulk quantity of product by the ¼ or ½ or whole beef. The beef will be custom cut to each customer’s order specifications.
The following information is based upon a whole beef. If you are not purchasing the entire beef, divide by 2 or 4 for a half or quarter.
From live weight to hanging weight there is approximately 40% shrinkage from live weight to slaughter. This means an animal weighing 1000 live weight would weigh 600 lbs at hanging and then after processing. (Assuming you did not want bones, fat trimmings, etc…) you would have approximately 520 lbs of consumable all natural, organic beef.
For Example: For a whole beef weighing 1,200 pounds live weight, hanging weight of approximately 720 pounds after butchering. During processing there would be about 80 lbs. of bones/trimmings that would be cut out (a lot of people keep the bones for their dogs), you would take home approximately 640 pounds of wholesome, all natural beef.
Using a 1” cut for steaks, you can expect:
- Porterhouse Steaks (4 per side)
- T-Bone Steaks (8-10 per side)
- Rib Eye Steaks (12 per side)
- Sirloin Steaks (4 per side)
*Choosing ¾’ or 1 ½“cuts will provide more or less than above.
Ground beef can be however lean you prefer. Remember, the more lean, the less ground beef and the fewer other cuts. Cuts like Chuck Roast, for example, will yield approximately 15% ground beef.
Because of the higher production costs, the majority of beef sold for consumption in restaurants, and grocery stores is not chemical free, naturally dry aged beef. It is beef that has been packaged for sale immediately after being processed and chemically treated for tenderizing. Therefore Red Tail Farm’s beef is dry aged for 14-21 days to naturally tenderize the beef. Therefore ensuring a natural chemical free tender juicy cut of beef. All cuts are individually packaged in air tight shrink wrapped packaging for ensured freshness.
